After years at the helm of Sushi Hon, our Executive Chef Hwa Yong realized a missing chapter in San Francisco’s dining scene: a dedicated space where premium Sake and Japanese Tea could be celebrated outside the formalities of an Omakase counter.

Sake holds stories as deep as any vintage wine or aged scotch, yet it remains an untapped world for many. Ondo (温度), the Japanese word for temperature, was born from a desire to bridge this gap. We believe that the soul of a drink is unlocked at its ideal temperature—from the precise whisking of ceremonial Matcha in the morning sun to the curated warmth of a seasonal Junmai on a foggy SF evening.
